Askifou: The last Sfakian cordwainer - Ασκύφου: Ο τελευταίος Σφακιανός στιβανάς


Stivania’, the renown, traditional Cretan boots, each pair tailor-made to its owner, now tend to disappear. One of the last specialized shoe makers is located in the region of Sfakia, in the village of Askifou. There, Ieronimos Gialedakis continues the tradition started by his uncle, Nikos Gialedakis. Together, they guide us through the intricacies of this specialized art-form.

Mr. Nikos Giales learned the shoemaker / cordwainer’s art in 1945 and has since stayed in Askifou, in charge of ‘dressing’ the feet of the men with his distinctive black boots. “I didn’t go and work in Chania, like everyone did back then. I’m a genuine local”, he says as he hammers the nails into the soles he makes. He used to make women’s shoes, too: “We also made ‘dress’ and formal shoes”, he says, remembering that during the WWII occupation they made soles using car tyres. However, the small room isn’t all about past stories. Smelling leather and dye, the room is also about the present and the future. At a time when this art begins to fade, since there is no other cordwainer’s shop in Sfakia, Ieronimos, Mr. Nikos’ nephew, returns to this tradition. He grew up around this art form, then left it for a while and is now back at it. “Stivania originated from the Venetians, the first to wear them here was a Cretan from Palaia Roumata. It seems he thought they were comfortable, then others began to like them, too, and the rest is history”, he says. He too insists on being called ‘Giales’, because it is believed that Cretans got the suffix ‘-akis’ in their surnames from the Turks, who wanted to belittle them (in Greek, the suffix ‘akis’ denotes a small version of something). Everyone goes through the shop in the afternoons: the village baker, neighbors talking about their sheep and foreign tourists, ordering stivania, five pairs at a time.

The village is 50km away from Chania and 750 meters above sea level. “I started in 1945, next to the artisans. Back then each village had 2-3 cordwainer shops, making stivania for sheep herders. The mountains were full of them. They came on foot to order them, walking four-five hours, I measured them and then they went on their way. They came back a few days later and if I wasn’t finished, they went to drink a tsikoudia or two at the coffeeshop, until I finished them and they could walk back to their herds. When they sheared the sheep, I sometimes went along to their sheep pens, and we had a great time. It’s a good life they have, sheepherders. Independent. They belong to no one. But today, sheep farming is all but extinct. Their production has cheapened, herders struggle to keep their appetite for it. Now you can go to Lefka Ori and see people eating European cheeses”. All incomprehensible stuff for this elderly man, still full of life, but his clear way of thinking is true and very topical. But back to stivania.

The name comes from the Italian ‘stivale’ meaning ‘boot’, a remnant of the long-standing Venetian rule in Chania (1204-1669). They fit ideally into the life of Crete’s inhabitants, since they are sturdy, made of cowhide, waterproof and capable of supporting the legs and feet in the rough, loose cobble-stone – filled mountains. “Authentic stivania are hand-made”, says Mr Gialedakis, explaining: “They need three to four days’ work. I used to work 15 hours a day, especially in the fall, when herders did most of their preparations for the season. Today we make mainly formal-dress stivania, for weddings, dance groups and such. The times have changed. Then there’s the tourists. The place is a common passage, so people walked in, saw us working and want to have theirs, too. I’m in this job for over half a century. I love it as much as I love this place. Since I started my own shop here in Askifou, I’ve never left it”.

The successor of the tradition

Fortunately, the tradition continues through the nephew, Ieronimos Gialedakis, so everyone who is interested in the stivania, can have a frame of reference. Additionally and more importantly, it is the only shop making authentic stivania, in an area of 880 square kilometres. “Unfortunately, there is no other cordwainer’s making stivania in this part of Chania, in the municipalities of Sfakia and Apokoronas”, says Ieronimos Gialedakis. “But people come here to order from as far as Rethymno, either to wear in events or even for everyday use. The so called ‘voskostivana’ (voskos = herder) are ordered from local people”. What’s the difference? “Simply that the lining in the voskostivana is made of cowhide (from a calf), for extra strength, while the formal stivania get a goathide lining. What we need to emphasize, however, is that in either case the stivania are very comfortable, since they are completely hand-made. Each customer coming in is measured in six different places: the toes, the instep, the calf, the distance between the leg and the ankle, plus two measurements for the heel, one with the heel on the floor, and one with only the toes touching down”. Stivania are made from sturdy cowhide, from calves, which they get from the ‘tampakaria’, the tanneries at the old port of Chania, which also continue a two-hundred year-old tradition. “We first make the pattern, before cutting and sewing the leather. We then make the ‘shoe last’ and modify it as needed.

“The sewn leather goes in the foot pattern, the so-called ‘gampali’ and is left there for about twenty four hours. We then nail the first sole. Afterwards, the nails are removed and the second sole, made of one centimeter-thick skin, is glued underneath and nailed in place. In the old days they used ‘prokadoures’, i.e. screw tacks, and for a sole they often used car or truck tyres, the old kind, that had no wires in it”.

Each pair of stivania is unique, like its owner. They are comfortable, waterproof and sturdy, “you get bored wearing them”, as people in the area liked to emphasize. Therefore, the cost of two hundred euros is more than justified, given the care and attention that is required for this work, as well as the patience, displayed by Ieronimos today and Nikos before him.

It’s worth mentioning that stivania have been part of the traditions and history of Crete for so long, that they are often the subject of traditional ‘mantinades’.

Οι λεβέντικες κρητικές μπότες, τα περίφημα στιβάνια, που φτιάχνονται στο χέρι, μοναδικές σαν τους κατόχους τους, τείνουν να εκλείψουν. Ένα απο τα τελευταία εργαστήρια βρίσκεται στην ευρύτερη περιοχή των Σφακίων, στο χωριό Ασκύφου. Εκεί, ο Ιερώνυμος Γιαλεδάκης συνεχίζει την παράδοση του θείου του, Νίκου Γιαλεδάκη, και μαζί μας ξεναγούν σε αυτή την ιδαίτερη τέχνη.

Ο κύριος Νίκος Γιαλές έμαθε την τέχνη του στιβανά το 1945 και από τότε έμεινε στο Ασκύφου να ντύνει τα πόδια των αντρών με τις χαρακτηριστικές μαύρες μπότες. «Δεν εχρημάτισα στα Χανιά όπου πήγαιναν τότε όλοι. Ατόφιος ντόπιος είμαι», λέει καθώς καρφώνει τις ξυλόπροκες για να μπουν οι σόλες. Παλιά έφτιαχνε και γυναικεία παπούτσια, «κάναμε και σχολιάτικα και φιγουρίνια» θα σας πει και θα θυμηθεί πως στην Κατοχή για σόλες έβαζε λάστιχα αυτοκινήτου. Δεν είναι όμως όλα ιστορίες και παρελθόν στο μικρό δωμάτιο που μυρίζει δέρμα και βερνίκι, είναι και παρόν και μέλλον. Την ώρα που η τέχνη του σβήνει, αφού στην περιοχή των Σφακίων δεν υπάρχει άλλο στιβανάδικο, ο ανιψιός του κυρ Νίκου, ο Ιερώνυμος, επιστρέφει στην παράδοση. Μέσα σε αυτή την τέχνη μεγάλωσε, την άφησε για καιρό και ξαναγύρισε κοντά της. «Τα στιβάνια προήλθαν από τους Βενετούς, πρώτος τα φόρεσε ένας Κρητικός στα Παλαιά Ρούματα, τα βρήκε φαίνεται άνετα, άρεσαν και στους υπόλοιπους και αυτό ήταν», θα σας πει αν τον ρωτήσετε. Κι αυτό «Γιαλέ» θέλει να τον φωνάζουν, γιατί υπάρχουν υποψίες ότι την κατάληξη –άκης την κόλλησαν στους Κρητικούς οι Τούρκοι για να τους μειώσουν. Κάθε απόγευμα από εδώ μέσα περνάνε οι πάντες: ο φουρνάρης του χωριού, οι γείτονες που μιλάνε για τα πρόβατά τους και οι ξένοι τουρίστες που παραγγέλνουν πέντε πέντε τα ζευγάρια τα στιβάνια.

Το χωριό βρίσκεται 50χλμ απο τα Χανιά και σε υψόμετρο 750 μέτρων. «Πρωτοξεκίνησα το 1945 δίπλα σε μαστόρους. Τότε κάθε χωριό είχε 2-3 τσαγκαράδικα που φτιάχνανε στιβάνια για τους βοσκούς. Τα βουνά ήτανε γεμάτα απο δαύτους. Ερχόντανε με τα πόδια τέσσερις-πέντε ώρες δρόμο, τα παραγγέλνανε, τους έπαιρνα τα μέτρα και φεύγανε. Ύστερα απο μερικές ημέρες επέστρεφαν κι αν δεν τα είχα έτοιμα, πίνανε καμιά τσικουδιά στο καφενείο ώσπου να περάσει η ώρα και να τους τα δώσω για να φύγουν πάλι στα κοπάδια τους. Όταν είχανε κουρά (το κούρεμα των προβάτων στα μαντριά), πήγαινα κι εγώ καμιά φορά στα μιτάτα τους και γλεντούσαμε όμορφα. Είναι ωραία η ζωή των βοσκών. Ανεξάρτητη. Δεν ανήκουν σε κανέναν. Σήμερα όμως πάνε να αφανίσουν την κτηνοτροφία. Έχει "φτηνίσει" η παραγωγή. Με κακή όρεξη είναι οι βοσκοί που κρατούν ακόμα. Εδώ πας στα Λευκά Όρη και καταναλώνουν ευρωπαϊκά τυριά οι ανθρώποι». Αδιανόητα πράγματα για τον ηλικιωμένο της ζωής, η καθάρια του σκέψη όμως είναι αληθινή και πέρα για πέρα επίκαιρη. Ας επιστρέψουμε όμως στα στιβάνια.

Η ονομασία τους προέρχεται απο την ιταλική λέξη stivale, που σημαίνει μπότα, απομεινάρι της μακράς περιόδου της ενετοκρατίας στα Χανιά (1204 - 1669). Ταίριαξε ιδανικά ως υπόδημα στους κατοίκους της Κρήτης, καθώς ήταν ανθεκτικό, απο βοδινό δέρμα, αδιάβροχο και "κρατούσε" το πόδι στα κακοτράχαλα και δύσβατα βουνά. «Τα αυθεντικά στιβάνια είναι χειροποιήτα» συνεχίζει ο κ. Γιαλεδάκης και συμπληρώνει: «Χρειάζεσαι τρείς με τέσσερις μέρες για να τα φτίαξεις. Παλιά δούλευα 15 ώρες το 24ωρο, ειδικά το φθινόπωρο, που οι κτηνοτρόφοι κάνανε τις προετοιμασίες τους. Σήμερα κάνουμε κυρίως σχολιάτικα στιβάνια, δηλαδή για γάμους, χορευτικούς συλλόγους και τέτοια. Αλλάξανε οι εποχές. Μετά, ζητάνε κι οι τουρίστες. Ο τόπος εδώ είναι "περάστρα" και στο διάβα τους ερχόντουσαν μέσα, βλέπανε να δουλεύουμε και θέλανε και αυτοί. Έχω πάνω απο μισό αιώνα σε αυτή τη δουλειά. Την αγάπησα όπως αγαπώ τον τόπο. Απο τότε που έκανα δικό μου μαγαζί εδώ στ' Ασκύφου δεν το εγκατάλειψα ποτέ».

Ο συνεχιστής της παράδοσης

Ευτυχώς που η παράδοση συνεχίζεται μέσω του ανηψιού του Ιερώνυμου Γιαλεδάκη κι έτσι μπορεί όλος ο κόσμος που ενδιαφέρεται για τα στιβάνια να έχει ένα σημείο αναφοράς, Επιπλεον, και πιο σημαντικό, πρόκειται για το μοναδικό μαγαζί με αυθεντικά στιβάνια σε μία έκταση 880 τετ. χιλιομέτρων. «Δυστυχώς, δεν υπάρχει άλλο τσαγκαράδικο που να κατασκευάζει στιβάνια στα νοτιοανατολικά Χανιά, στους δήμους Σφακίων και Αποκώρονου», αναφέρει ο Ιερώνυμος Γιαλεδάκης. «Έρχονται, όμως, και παραγγέλνουν και απο το Ρέθυμνο, είτε για να τα φορέσουν σε κάποια γιορτή είτε ακόμα και για καθημερινή χρήση. Τα λεγόμενα "βοσκοστίβανα" αφορούν παραγγελίες απο τα δικά μας μέρη». Ποιά είναι όμως η διαφορά; «Απλώς, στα βοσκοστίβανα βάζουμε φόδρα απο μοσχάρι για μεγαλύτερη αντοχή, ενώ στα σχολιάτικα η φόδρα είνα απο κατσίκι. Αυτό που έχει σημασία, όμως, να το τονίσουμε, είναι οτι τα στιβάνια είναι πάρα πολύ άνετα, καθώς είναι εξολοκλήρου χειροποίητα. Σε κάθε πελάτη που έρχεται του κάνουμε έξι διαφορετικές μετρήσεις. Στα δάχτυλα, στο κουτουπιέ, στη γάμπα, την απόσταση κνήμης - αστραγάλου και δύο μετρήσεις στη φτέρνα -μία να πατάει κάτω η φτέρνα και μία τα δάχτυλα». Τα στιβάνια είναι φτιαγμένα απο το λεγόμενο δέρμα "βακέτα" χοντρό δέρμα απο μοσχάρι που προμηθευόμαστε απο τα "ταμπακαριά" (βυρσοδεψεία) στο λιμάνι των Χανίων που συνεχίζουν μια παράδοση κοντά δύο αιώνων. «Αφού κάνουμε το πατρόν, στη συνέχεια κόβουμε και γαζώνουμε το δέρμα. Μετά φτιάχνουμε το καλαπόδι και το τροποποιούμε ανάλογα».

«Το γαζωμένο δέρμα μπαίνει στο καλούπι - εξομοίωση του ποδιού, το επονομαζόμενο "γαμπάλι" και το αφήνουμε εκεί για ένα εικοσιτετράωρο περίπου. Κατόπιν καρφώνουμε τον πρώτο πάτο. Στη συνέχεια αφαιρούμε τις πρόκες και κολλάμε απο κάτω τον δεύτερο πάτο, που είναι απο πετσί, πάχος σχεδόν ενός πόντου, το οποίο στερεοποιούμε με ξυλόπροκες. Παλιά χρησιμοποιούσαν τις λεγόμενες "προκαδούρες" ή αλλιώς "βιδόπροκες", ενώ για σόλα τοποθετούσαν συχνά και λάστιχα αυτοκινήτου, παλιάς τεχνολογίας χωρίς σύρματα».

Κάθε ζευγάρι στιβάνια είναι μοναδικό, σαν τον κάτοχό του. Είναι άνετα, αδιάβροχα και ανθεκτικά, «βαριέσαι να τα φοράς» όπως μας τόνισαν χαρακτηριστικά κάποιοι άνθρωποι απο εκεί. Συνεπώς, το κόστος των διακοσίων ευρώ, δικαιολογεί το μεράκι που απαιτείται για αυτήν τη δουλειά αλλά και την υπομονή που επιδεικνύει σήμερα ο Ιερώνυμος και παλαιότερα ο Νίκος Γιαλεδάκης.

Ιδιαίτερης προσοχής αξίζει το οτι τα στιβάνια είναι τόσο ενταγμένα στην  παράδοση και την ιστορία της Κρήτης, που πολλές φορές έχουν αποτελέσει αφορμή για μαντινάδες.
